Three Holiday Recipes from Silverado Grandmothers

When it comes to most meals during the holiday season Grandma usually knows best. Her ticks of the trade and recipies perfected with years of practice are what make all of us jump with excitement when we get to sample her treats. At our Silverado Senior Living-Kingwood community three generous resident grandmothers shared their most cherished recipes. The culinary staff at the community serve these tastey treats at all the holiday parties. If you’re looking for something yummy to try this season try these goodies from our Silverado Grandmothers!

Silverado Grandma’s Apple Pie

Ingredients:

1 recipe for a 9 inch double pie crust pie

½ cup unsalted butter

3 tablespoons all purpose flour

½ cup white sugar

½ cup packed brown sugar

¼ cup water

8 granny smith apples, peeled, cored and sliced. 

1 tablespoon cinnamon

1 tablespoon vanilla

1 tablespoon lemon

Directions:

Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar, cinnamon, vanilla  and water, bring to a boil.  Reduce temperature and simmer 5 minutes.  Toss the apples with lemon juice. Meanwhile, place the bottom crust in your pan.  Fill with apples, mounded slightly, gently pour the sugar and butter mixture over the apples.  Cover with a lattice work or just the remainder of the crust with holes poked in the top of the crust.  Spread some melted butter over the top of the crust and sprinkle with sugar.

Bake 15 minutes at 425 degrees. Reduce the temperature to 350 degrees and continue baking for 35 to 45 minutes.     

Ms. Hands Famous Miniature Pecan Pastries

Ingredients:

Crust

3 oz cream cheese

1 stick butter

1 cup flour

Blend these ingredients thoroughly and chill dough. After chilled pinch off 24 balls of dough and place in mini muffin tins. 

¾ cup brown sugar

1 tablespoon melted butter

½ teaspoon vanilla

1 egg

½ cup pecans chopped

Mix all these ingredients together and place into the crust of the mini muffin tins.  Bake at 350 degrees for 25 minutes. 

 Mint Hot Cocoa Mix

1/3 cup brown sugar

2 ½ cups powdered milk

¼ cup cocoa

1 ½ teaspoon powdered vanilla

12 hard peppermint candies, crushed

Mix all ingredients.  Put the mix in a zippered bag, then place the bag in an attractive mug or tin.  Attach these instructions:  Stir one half cup mix into one cup hot water.
